wow, thats impressive. i always thought only the head chef/owner would be japanese, and all the servers would be locals.

guess you can simply ask them if its fine to use your hands, but i'm sure they won't mind. most restaurant adapt to the local culture instead of sticking strictly to the owner's culture. even the recipe may be slightly different. i always assume that sushi in japan will taste quite different from sushi elsewhere in the world.

personally, i hate getting my fingers sticky and oily.

That's the case for most places. But there are a few here that are extremely traditional, and they're the best places in town. Those are the ones I go to.

As far as I know in the formal sense of sushi chopsticks are used to remove a piece from the "community plate" to your personal plate then hand from plate to mouth.

Kinda like the formal tradition of fork on left hand knife in right to cut the food. Set the knife down and switch from left to right hand to put the food in your mouth.

Who does that crap anymore? Lol

I enjoy using chopsticks and can "shovel" just as effectively with em as i can with a fork.

I have always cut with left hand and so i never had to switch. For me eating is about satisfying my hunger, so i assume i automatically used left hand to cut as i am a right handed fork guy!
