    I confine my simple sugar intake to fruits, like you. And I confine when I eat fruit to pre workout. Usually two bananas is enough for an intense workout.

    Making them into a smoothie will increase their metabolic rate, and how quickly they are consumed. What I am not sure of is how significant this increase will be.

    Solids take longer to pass through the stomach than liquids, since they require more digestion. That's all he meant.

    another example is the potato. A baked whole potato has a better GV than mashed potatoes. The more you process a food with carbs in it, the easier it is to convert it to sugar, and therefore, worsens the GV of the food.
