    Lower Carb HIGH Protein Pancakes

    Love these bad boys... I make them in a bigger batch for me and my wife but I'm sure cutting the recipe down is not a problem. This recipe will make 10 large size pancakes. We never eat all of them.

    1 Cup of Flour
    1 Cup of Micellar Casein Protein Powder (Plain or No Flavour Added)
    4 TBSP of Splenda
    2 tsp of Baking powder
    1 tsp of Baking Soda
    1 tsp of salt
    2 Whole Eggs
    1 & 1/2 to 2 cups of low fat butter milk (I use closer to 2 cups, but put 1 & 1/2 cups in and mix it together.... add more if you feel it's too thick) If you don't want to use buttermilk you can use normal milk and add vinegar to sour the milk. If you are curious about that, just ask and I'll explain.

    1. Mix all dry ingredients together

    2. Beat the 2 eggs and add them plus the butter milk to the dry ingredients.

    3. Mix together adding more buttermilk if needed until you reach desired consistency.

    4. Spoon out batter on to griddle and enjoy!

    As previously stated you can cut this recipe in half and it will make approx 4 to 5 large size pancakes.
