The fresh lemon or lime juice in the recipes are a minimal amount and you won't consume all of it since you're going to be marinating the meat in it.

CUBAN LIME MARINADE

3 cloves of garlic
2 tsp. ground cumin
1/2 cup fresh lime juice
1 tbsp. chopped fresh oregano
1/2 tsp. ground black pepper

Mash the garlic with a pestle or press it through a garlic press to make it into a smooth paste (remember, fresh is always better!). Add the lime juice, oregano, cumin and pepper. You can use this mixture to marinate chicken or turkey breast in the refrigerator (try doing it a few hours before you cook it). This recipe makes enough marinade for 2 servings.

THAI MARINADE

1/4 cup fresh parsley, minced
1/4 cup lemon juice
1/2 tsp. grated fresh gingerroot
1/4 cup lime juice
1 tsp. red pepper flakes
3 cloves garlic, minced or pressed

Combine all ingredients. Use this mixture to marinate fish, chicken or turkey breast. This recipe makes enough marinade for 2 servings and can be doubled for more servings.
