I wouldn't be too worried about mercury. The Japanese eat way more fish than any of us will and they're not all subcumbing to mercury poisoning. But yeah, I've done the cans of tuna + rice for meals while at work. I've even slopped some BBQ sauce on it and surprisingly it wasn't bad. One benefit is you never have to worry about a co-worker stealing your food from the fridge.
I've heard The Ultimate Warrior and Sting say when they were broke and first breaking in to wrestling, they would put tuna, orange juice and some peanut butter in the blender and make shakes of it.
