what is the Best carb (or carb blend) for meal replacement shakes?
    - Maltodextrin
    - Dextrose
    - Fructose

What is the best late night protein or protein blend (ie before bed)?
    - Hydrolyzed Casein
    - Calcium Caseinate
    - Micellar Casein
    - Milk Protein Isolate

4 shakes is definitely too much but your question can't really be answered properly. Everyone needs a different amount and due to the different types of training and whether you are on a bulking or competition regime your nutritonal intake will vary.

You need to explain what your goals are, your lean muscle mass, your age and what your daily caloric intake and breakdown is.

The best daily protein is whey protein
The best night time protein is casein or a combination of casein and whey
Post workout you need maltodextrin, but the other times of the day that would not be ideal. How to break that all down depends on your stats.
