GREAT article. I have been experimenting with carb free flour too. I currently use soy protien isolate in place of it and it works okay (some brands better than others). From the description of the product that they will market, it sounds very similar to what I have been doing already for a couple years. Now if I would have had a better business sence, I would have positioned it that way abnd brought it t market, and I would be the one getting rich. Drat.
