to adjust settings on wireless and put a password on , open internet explorer and in the search bad type : 192.168.0.1
thats the default I.P. addredd for all modems. A window should pop up allowing you to change settings, passwords etc

Do a google search for wireless security and read up on it. I aint got time to go into detail right now.

Sure, log into your router just as checmical king said and it should show active connections. Hopefully only your IP address is listed.
Also go with WAP instead of WEP encryption if it is supported by your router.***No source checks!!!***

check your window firewall check the "On recommendation" and the "no exception"
Get a Privacy Service that have Personal Firewall Plus (McAfee Security Center)
you can track each ip address and even trace where they are located at and give you more information about the person. You can eitheir choose to banned the person or not. Is a great software

Your need for an encryption is honestly somthing of a low risk. unless you do somthing like heavy online banking, and even then the risk of somebody getting into your computer and "hacking" into it is very minimal.
I mean if you dont want people using your internet connection for free i can understand, but I wouldnt worry about somebody hacking into your computer. The knowledge and background of a person hacking into your computer through a wireless connection or even with a normal cable connection has to be pretty much a computer guru. Its not an easy thing.
