    my favorite part is how louisana is red in 2005, and then down to orange in 2006...

    i guess all the fat people floated away during hurricane katrina!

    the whole trans fat thing is a load of BS tock, because the alternative is saturated fat. Trans fat is worse, but not all that much. A saturated fat diet is not as good as a low fat diet...and that takes better consumer choices.

    Trans fats don't make people fat, poor choices do...tell you what do an experiment with rats eating trans fats vs saturated fats and you'll notice both rats get fat.

    I believe the colors are equal to economics in food that people can afford .

    Didn't all this decline begin a couple years before NAFTA ?

    There's polyunsaturated fat and monounsaturated fat.

    But geez, did you see that 4 year old McDonald hamburger and fries? It looked as good as new. Food that won't go bad can't be any good at all.

    yes I know...it just mean either you've got C-C-C-C-C = Totally saturated because they are all single bonds...in other words all the open bonds are taken by hydrogen making a chain of single bonds or C=C-C=C-C....wher some of the hydrogen bonds are taken up by double bonds...in other words the chain is not saturated by hydrogen.

    The more "saturated" a fat is the more thick it is at room temperature...think of oil vs butter...so any saturated fat replacing a trans fat will have to be saturated enough to replace the viscosity requirements the trans fat was filling.

    This is a problem becuase of membrane permiability...the more saturated a fat the "tighter" your cell membranes and the more cholesterol your body must make to compensate.

    Anyway, trans fat is overblown as the enemy...and they aren't what's preserving a McD's hamberger. In fact, I call hoax on that, evidence from experiments conducted under my car seat in college suggest that McDonald's hamburgers will decay quite quickly.
