    Your favorite recipe's - post them up!

    I've seen some pretty good recipe's posted here and there..... so I figured we could get a thread going to group these recipes so we can find them and try em. I know the typing skills some of you have can be pretty questionable (I wont name names..... Cal) but if you could keep it as neat and easy to read as possible..... that would be great lmao! I'd also like to keep it semi-clean so it's easy to schroll through and find what you're looking for.

    I'll kick it off with a kielbasa dinner ahaha

    Haz's Killer Kielbasa Dinner

    What you'll need:

    - 1 Green pepper
    - 1 Red pepper
    - 1/2 White onion
    - 1 Lite Polska Kielbasa (The Light version has half the fat and sodium)
    - 2 cans Diced tomatoes with basil, garlic, and oregano
    - 1/2 to 1 can of tomato sauce
    - Yellow rice

    Directions:

    Julienne (slice for you cooking illiterates) the veggies and cut the Kielbasa into round pieces - cut them to the thickness of your liking. Start cooking the rice..... it takes about 20 minutes. Now stir-fry the veggies and the kielbasa until the veggies are soft and the kielbasa is starting to brown. Once this is done - add in both cans of diced tomatos and a 1/2 can of tomato sauce and reduce the heat to a simmer. Let it cook until the sauce is steaming. You can add in the other 1/2 can of tomato sauce if you want it more saucy. Once your rice is done..... scoop it onto a plate and scoop your bangin kielbasa mixture onto the rice.

    Serves about 2 bodybuilders or 4-5 regular people.

    I Like Chicken Picatta because it is relatively healthy and delicious.

    2lbs/1kg Chicken Breast
    6-8 lemons juiced
    1 jar Capers
    Olive Oil
    Butter
    Flour
    1 cup/250ml Chicken Stock

    Heat up frying pan with 2 parts olive oil to one part butter... about 2-3 TBSP
    hammer chicken with meat tenderizor or real hammer until they are flat.. about 1/2 inch thick.. Dredge them in flower fry them on each side until cooked.. about 2-3 min each side. set chicken aside, and repeat adding the olive oil / butter mixture as needed until all chicken is done. When finished add Chicken stock, lemon juice. Then add the Chicken and pour capers and juice over thicken. Make sure to scrape the bottom of the pan to get the flavoring into the mixture. simmer for 10 min and then serve over rice..

    If you decide to leave out the butter, you can the texture of the sauce is just not as tasty.

    This one is easy delicious and keeps for days in the fridge, it is also easily doubled:
    Chicken and brown rice casserole:
    2 bonelsss skinless ckn breasts
    1 cup brown rice (real not instant or minute rice)
    1 can cambells healthy request cream of chicken OR cream of mushroom OR cream of celery- your choice (when i double i sometimes mix flavors)
    1/2 packet powdered onion soup mix (low sodium if avail - hard to find at times so when i do i buy 4-5 packs)
    Spray 8x8 pan with nonstick cooking spray (9x13 if u double)
    dump in rice and spread out
    place 2 chicken breasts on dry rice
    mix can of soup with 2 soup cans of water-pour over chicken into pan
    sprinkle 1/2 packet powdered soup mix over top of entire dish
    bake @350 F for 1hr 30mins covered with foil - then 15mins uncoverd

    This is delicious and with healthy request soup and low sodium onion soup powder very healthy across the board. A hearty winter meal and like i said keeps for days. I never make the "single version" always double it
