Run Test E for 12 weeks at the proposed dose.
PCT starts 14 days after your last pinning of Test E.
As for PCT, run Nolvadex at 40mg ED and Clomid 100mg ED for the first 2 weeks, 20mg Nolvadex and 50mg Clomid for the last 2 weeks, a total of 4 weeks.
Arimidex 0.25 EOD or even E3D should be sufficent.
HCG 250iu E3D should prevent testicular atrophy to an extent.
As for your gain and strength expectations, it will boil down to;
1. Training
2. Diet
3. Genetics
Good luck with your cycle.

Post what you eat in a typical day. If you're not gaining on 4000 calories then your doing something wrong and steroids will not help you in that aspect, it would actually be detrimental. Weight put on during a cycle with an incorrect diet will end up being fat/water/bloat and quickly vanish come PCT. Furthermore, no disrespect whatsoever to your wife, but often a diet coming from a nutritionist is ideal for a healthy lifestyle, but not necessary sufficient for someone going the bodybuilding route (specifically - food choices).
Turkish has laid out the only cycle you should consider, but I'd strongly encourage you to getting to atleast 200 pounds and getting your diet checked on this board before starting. It will save you alot of time and money in the long run.
