PB chocolate chip cookies
My mom is quite a health nut and one hell of a cook. These are by far the best cookies she has ever made. The people at her gym love them! Thought I would share!! As far a cookies go, theyre very healthy. If you make them right, they should be very moist and melt in your mouth!
PEANUT BUTTER CHOCOLATE CHIP COOKIES
1 1/2 cups of whole wheat flour
1 tsp. of baking soda
1/4 tsp. salt
1 cup creamy peanut butter or natural PB
3/4 cup of unsweetened applesauce
2/3 cup of brown sugar or you can use 5 Tablespoons plus 1 tsp. of Splenda Brown Sugar
1/3 cup of Splenda (white)
1 tsp.vanilla
2 eggs
1 pkg. of Nestle Semi Sweet Chocolate Morsels
PREHEAT oven to 350
COMBINE flour, baking soda and salt in small bowl, set aside.
BEAT peanut butter, applesauce, brown sugar ,white sugar and vanilla extract in large mixer bowl until creamy. ADD eggs one at a time, beating after each addition. Gradually stir in flour mixture, stir in chocolate chips. Drop by teaspoon full onto a cookie sheet that has been sprayed withe a NON- STICK COOKING SPRAY . BAKE 9-12 minutes or until lightly brown. Cool on baking sheet for 2 minutes ,remove to wire rack to cool completely.ENJOY!!!
P.S. She sometimes adds some wheat gluten in to bump up the protein content a bit.
