Rugger's Yamburger
Well, I guess the proper name would really be sweet potato pancake, but that's not as catchy...
I hate sweet potatoes, but still manage to choke one down each day. In my endless journey to make the sweet potato more palletable I've come up with some rather interesting ideas.
The one I tried last night was one of my better creations.
Take 1 small sweet potato (peeled) and wrap it in plastic wrap. Bake in the microwave thoroughly.
Put the baked potato in a medium sized bowl and mash it.
Add one egg white (2 to a large potato)
Mix with a fork or whisk thoroughly.
Heat one Tbsp Extra Virgin Olive Oil in a medium sized non-stick pan over high heat.
Add the potato/egg mixture and flatten with a pancake turner.
Season the top of the pancake (I used salt black pepper and a little garlic powder)
Once the bottom is crisp, flip the pancake and season the other side.
Once that side is crispy as well you're done.
I experimented with several different toppings, (fat free sour cream tobasco sauce, light Ranch, sugar free ketchup) but I think it's better just plain...
I still didn't really love it but it got me through another dinner...
Those of you that actually like sweet potatoes should enjoy this one.
