    Great Fish and Veggie Recipe - ULTRA CLEAN

    I am a trained chef although I am not actively working as one anymore. With that, I spend alot of time at home playing around and trying out new things. I came up with this recipe and I love it! Play around with it, it's very versatile and you can add/remove ingredients to your liking:

    2tbsp extra virgin olive oil
    4 cloves garlic, coarsely chopped
    1 zuchinni, sliced
    1 container (about 8oz) mushrooms, sliced
    1 green or red bell pepper, coarsely diced
    1 tomato, coarsely diced
    8oz broccoli crowns, trimmed
    1 can small red beans, or 1 can of red kidney beans
    4 fillets (about 16oz) of mahi mahi or tilapia, cut into 1-inch cubes
    1 cup whole grain brown rice
    salt
    white pepper
    red pepper flakes

    Cook the rice according to the package instructions.

    In the meantime, heat the olive oil over medium-low heat. Add the garlic and let it sweat for about 2 minutes (do not let it burn!). Add all of the vegetables and fish. Saute everything together for about 5 minutes. You may need to turn up the heat to medium-high as all of the ingredients release water. Continuously toss for even cooking. At this point, consistency should be close to that of a thin-set stew.

    Reduce heat back to medium-low, cover and let cook for 5 more minutes stirring occasionly. Add beans. Remove from heat, cut open a piece of fish to ensure it's cooked through. Fish should not be tough, but very tender. Vegetables should be tender-crisp. You may drain some of the liquid, or leave it all in if you like it 'wetter' - this is completely up to you.

    Season with salt, white pepper, and a pinch or 2 of red pepper flakes.

    Serve up the brown rice in a bowl, and scoop a good amount of 'stew' over the brown rice. Eat up and enjoy!

    I don't currently have macros for this, but as you can see this is ultra healthy and super clean - with all of the veggies and the fish as a protein source, this meal should be good for just about any time of day.

    sounds great i dont have many good fish recipes please post more if you have them
