quinoa & lentil soup
found this on the internet somewhere and it tastes great!!
Quinoa and Lentil Soup
Ingredients
1 medium red onion, diced
1 sweet potatoe
3 cloves garlic, finely chopped
2 tsp turmeric or any mixed curry dry spices you have on hand
1 tbsp dry basil
1 cup quinoa, rinsed
1 cup yellow lentils, rinsed
3 cups of stock (I prefer chicken stock, but use vegetable stock if you are a vegetarian) & 3 cups water
Sea salt and freshly ground pepper to taste
Method
In a large soup pot, on medium heat sauté the onion and garlic in organic coconut oil until tender. Add the seasonings, quinoa, lentils and chopped potato. Pour in the broth and bring to a boil. Reduce heat to a simmer, and cook until the lentils and quinoa are tender about 20-30 minutes. Feel free to add more stock to your desired consistency. Add sea salt and pepper to taste.
Garnish with cilantro. And lastly, while you are salivating with anticipation, add some olive oil for a healthy dose of monounsaturated fat, if you wish.
