Lean Stuffed Peppers
Ok fellas, I made these yesterday and holy crap are they amazing.
Lean Stuff Peppers

Ingredients:
4 large bell peppers (red or green)
1/2 onion
1 1/2 cup brown rice
3 tbsp olive oil
3/4 tomato
tomato sauce
garlic powder
ground pepper
1. Boil water in a large pot. The pot should have enough water to allow 4 peppers to sit fully submerged.
2. Cut the tops(stems) off of the peppers and remove seeds. Place the 4 peppers in the boiling water. Boil for 4 minutes. Remove from water. Set peppers aside. Now, use this same water to cook your rice.
3. In a large skillet, heat 3 tbsp olive oil. Add 1/2 of a chopped onion, 2 - 3 tbsp garlic powder, 1/2 tbsp of ground pepper, 3/4 chopped tomato and saute for 4-5 minutes over medium heat. Remove from heat.
4. Add 1lb bison or 96% lean groud beef into your skillet. Then add 1 1/2 cups of your cooked rice into the skillet. Then mix it all together. Dont use your hands because this oil will obviously be really hot. Once the mixture is mixed, spoon into each pepper.
5. Place stuffed peppers in a baking pan with 1 1/2 cups of water in the bottom of the pan.
6. Cook for 40-45 minutes at 350 degrees.
7. Add some tomato sauce or sugarfree ketchup on top. Also a dash of hotsauce.
I dont have the macros but I'm sure you guys can figure it out pretty quick. It all depends on the meat you use.
