Protein Pumpkin Muffins
So I def got the idea loud and clear that you guys were looking to eliminate any flour (even whole wheat) and any added fat when I posted my Protein Oatmeal Cookie recipe. Well I was able to pull off exactly that with this recipe and after a few tries the results were pretty damn delicious. Its hard to believe something so healthy can taste as good as these!
1- 15oz can of pumpkin
1 cup unsweetend applesauce
4 egg whites
1 1/3 cup oats
6 scoops vanilla protein powder
3 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons cinnamon
1 cup splenda
Preheat over to 350 F
Mix wet ingreidnets in large bowl
Mix dry in another bowl
Add dry ingredients to wet mixing as you add
scoop using a 1/4 cup measuring cup into muffin pan sprayed with non stick cooking spray
bake for 18-22 mins
makes 12 muffins
each muffin:
113 cals
1.7g fat
10.6g carbs (2 fiber)
14.5 g protein
Refrigerate after cooling.
Therse things are good!
