Mex Style Shredded Beef
Heres a good, easy recipe for some BEEF! High protien, low fat! You'll get several days food outta this.
Beef, chuck roast, 2' pieces (sometimes you can get "stew meat" that is already cut and usually a little cheaper, and you can cut off any fat chunks you want)
Onions, 2 med, diced large
Garlic, chopped, 1/4 cup
Enchilada sauce, 1 can, about soup size. mild med hot, whatever you want.
Jalapenos, chopped small 1.5 each
Kosher salt 1 Tablespoon
Pepper 1 Tablespoon
Cumin 1 Tablespoon
Cilantro, 1 bunch. Cut off the stems and chopped finely. Rough chop the leaves and save for later.
Method:Put all ingredients in a pot and bring to a boil. Stir occasionally and bring down to med heat, to a good simmer. Put a top on it and let it go for 2 hrs (depends on how tender you want it) Make sure to stir every 15 minutes or so.
When the meat is soft and the sauce thickens add the remaining cilantro. Cook a few minutes breaking the meat up and there you go!
This can done in a crock pot to. Place in crock pot at night on high and the next days dinner will be ready when you get home.

That looks legit! I bet you could cook it in a pressure cooker in a quarter of the time as well. I do this with whole roasts. 12mins per 1lb of meat is a good number to go by.

Ok, so I have this recipe going on the stove top as we speak. I'll report back on what I thought but if it tastes HALF as good as it smells, this one will definitely become a staple. One thing I did forget was the cilantro. How I managed this I don't know as I love cilantro. But, I'm sure it will come off without a hitch either way.

Shut the hell up!! LOL! Man I just can't believe I forgot to pick that up at the grocery store. It was very easy to make. The hardest part was waiting! LOL
I bought a roast that was a little over two pounds. It was just me and the Mrs and there might be enough left to make a couple more tacos. I bought some corn tortillas and threw the baking stone in the oven at 350. When it got hot it just tossed some corn tortillas on the baking stone. The only other thing I did was add just a touch of sour cream to each taco. Absolutely awesome recipe!! Thanks lstbred! Oh, the southwestern pork stew you posted up is next on my list. You could actually incorporate the same ingredients from the pork stew into this recipe as well! Thanks again!

One other thing to note...this dish is just like chili, spaghetti, soups, etc, the leftovers are even better! I had just enough left to make about 2 more tacos and after sitting in the fridge all night and the flavors having time to meld it was even more awesome.
