Peanut Butter & Pork (protien) Stir Fry
Vegetable oil 4tbl
Pork butt (shoulder) 4 1/2#
Carrots, sliced thin 12ea
Red bell pepper, 1" diced 6ea
Celery, sliced thin 6stalks
Yellow onion, 1/4" rings 5ea
Garbanozo beans 2qrts
Peanut Sauce:
Water 1 1/2cup
Peanut Butter creamy 1cup
Soy sauce 1cup
Cornstarch 1tbl
1. Mix all ingredients for sauce. Set aside.
2. Heat 2 tbl of oil in wok. Add pork and stirfry until no pink remains. Remain from wok.
3. Add remaining oil, carrots, bell peppers, celery and onion. Stir-fry until crisp tender, and add beans, stir-fry for 1 more minute.
4. Return pork to wok.
5. Add peanut sauce to mixture. Mix together and cook until thick.
A very simple, easy and quick delite. You can use ANY protien you want beef, chicken, tofu it doesnt matter, it's just that pork and peanut sauce go really well together. Of course you can exchange, lessen, or add more veggies if you want.
Obviously most people dont have a wok so a pan with a good lip on it works just fine. This recipe makes about 25 "normal" people portions lol so you can scale it to the amount you need.
**For better results make in several batches**
