Olive oil 3/4cup
Lemon juice 2cup
White wine 2cup
Lemon zest 1/4cup
Garlic, minced 1/4cup
Kosher salt to taste
Pepper to taste

Chicken breast 7#
Cherry tomatoes, halved 2qrts (2 baskets)
Artichoke hearts, quartered 6cup
Parsley, chopped 1bunch
Green onions, thin sliced 3cup
Salad (lettuce) mix 5#

1. Season chicken with salt and pepper. Grill or bake. Cool. Dice one inch.
2. Prepare viniagrette.
3. Combined all ingredients together.
4. Place on a bed of salad mix.

Another simple and easy way for you to get protien and veggies! If you want you can get a similiar dressing already made at your local store. This recipe makes about 25 "normal" people portions lol so you can scale it to the amount you need.
