Garlic and herb flatbread/pizza dough (gluten free)
Gluten free, high in fiber! Garlic and herb flat bread
Ingredients:
Bobs Red mill Gluten free pizza crust mix (includes yeast packet)
Egg whites (2) or liquid egg whites 1/4 cup
Extra Virgin olive oil ( 2 tablespoons)
1 cup of warm water
1/2 cup of unsweetened vanilla flavored almond milk
1 teaspoon of garlic salt
1 teaspoon of oregano
1 teaspoon of basil
1 teaspoon of pesto
1/4 cup of organic gluten free coconut flour (bobs red mill high fiber coconut flour)
Take the entire pizza mix and pour it into the mixing bowl, take the yeast and mix it in with the flour. Then add the eggs, water, milk, and olive oil. Mix everything together. The consistency is a little more sticky and watery then processed flour dough and that's okay you'll add the coconut flour later. Once it's mixed well wrap the dough in seran wrap and let it sit in the fridge for 15 to 20 mins for the dough to rise.
Take it out the fridge. Get the coconut flour and the spices and start to mix the other items into the dough. That will help thicken the consistency. Once it's ready place the bread on your pan make sure you seared olive oil on it, I use a 16 inch pizza pan and flatten the dough over the pan. Add olive oil on top of the dough as a glaze, you don't want dry flacky bread.
Let the oven preheat for ten min at 350 degrees.
Place the flatbread dough in the oven for 25 mins at 350 degrees.
Check on it after about fifteen mins if its dried out add oil on top so it's not crispy, you want it soft and thin like pita bread.
When you're done enjoy as a side dish with some dipping oil or part of a sandwich
This taste so good especially for being healthy you would never think... Oh yeah and you can use this recipe for a healthy pizza too just add marinera and cheese and whatever toppings you want.

Love the coconut flour!! I've been looking into grain-free baking as of late.
