Mango Salsa
Heres a light "summery" salsa that is both sweet and spicy. Mango salsa has a wide variety of uses! it goes good with Tilapia, salmon or pork loin to name a few. This will make about 4 cups.
Mango, peeled, seeded, diced small 2ea (should be about 3 cups)
Red bell, chopped fine 1/4c
Red Onion, chopped fine 1/4c
Jalepeno, chopped fine 1ea (roast on bbq gives it great flavor)
Lime Juice 1/4c
Cilantro, chopped 1/4c (1 bunch)
Red Wine Vinegar 2 tbls
Olive oil 2 tbls
Cumin 1/2 tsp
Salt to taste
Chop everything and toss together. Let it set for an hour or so to let the flavors blend together. I think it's better the next day, usually gets a little spicier.Last edited by lstbred; 05-22-2013 at 03:59 PM.
