Big's Chickpea Tomatoe Curry
Ingredients: (Serves 4)
400 g (1 can) chickpeas
400 g (1 can) chopped tomatos (see below)
1 medium onion, chopped
4 tbsp vegetable oil
1/2 tsp chilli powder
1 tsp turmeric powder
1 tbsp garam masala
1/2 tsp salt to taste
Note: the recipe on the can said to only use 200 g of tomatoes, but I used 400 and it was still great.
Directions:
Drain chickpeas and rinse with cold water.
Fry the onion in the oil until it's golden brown
Add tomatoes and all the spices. Mix well. Let everything simmer for a few minutes until the oil starts to come to the top.
Add chickpeas and cook, covered, for about 10-15 minutes, or until the chickpeas are cooked and it tastes delicious.
