Marinated Grilled Fillet of Salmon

4 salmon fillets
6 ounces of Jack Daniel’s whiskey
4 tbsp of brown sugar
4 tbsp olive oil
blackened seasoning
pepper to taste
Prepare a marinade of olive oil, brown sugar, and Jack Daniels. Sprinkle fillets with pepper and seadoning, place in marinade and refrigerate for 2 to 3 hours. Prepare your grill. Place the fillets on a medium hot grill, skin side up for 3 minutes. Rotate slightly for 2 minutes to create angled grill marks. Turn the fillets over carefully, skin side down. Cover to trap smoke, and grill for 4 to 5 minutes more. Top with a pat of seadoned butter; garnish with lemon and a sprig of fresh dill.
