    MOO SHOO CHICKEN WITH WHOLE WHEAT MOO SHOO PANCAKES

    Yield: 4 servings

    * 1/4 cup soy sauce, low sodium, divided
    * 4 cloves garlic, minced, divided
    * 10 ounces skinless boneless chicken breast, cut into 2" strips
    * 1 teaspoon ground ginger
    * 2 cups shredded Napa cabbage
    * 2 cups shredded bok choy, (Chinese cabbage)
    * 1 cup shredded carrots
    * 1/2 cup straw mushrooms, canned,drained, rinsed thinly sliced
    * 1/2 cup bamboo shoots, canned, drained,rinsed, thinly sliced
    * 1/4 teaspoon hot chili oil
    * 1 tablespoon hoisin sauce
    * 1 teaspoon hoisin sauce, additional
    * 8 Moo Shoo Pancakes

    MOO SHOO PANCAKES:

    * 1/2 cup whole wheat flour
    * 1 tablespoon whole wheat flour, additional
    * 1/2 cup flour
    * 1 tablespoon flour (reserved)
    * 5 tablespoons water

    To prepare marinade: In gallon-size sealable plastic bag, combine 2 tbsp of the soy sauce and half of the garlic. Add chicken and refrigerate 1 hour, turning bag occasionally. Drain chicken and discard marinade.

    In small bowl, combine the remaining 2 tbsp of soy sauce and the remaining garlic with the ginger and set aside.

    Spray large nonstick skillet with cooking spray and place over medium heat 30 seconds. Add chicken and cook, stirring constantly, til cooked through, 2 to 3 minutes. Remove to plate and keep warm.

    Return skillet to medium heat and add cabbage, bok choy, carrots, mushrooms and bamboo shoots. Cook, stirring frequently, until cabbage and bok choy begin to wilt, 4 to 5 minutes. Add cooked chicken, the reserved soy sauce mixture and the hot chili oil, toss lightly to combine.

    To serve: Place 1/2 tsp hoisin sauce on each Moo Shoo Pancake, top with 1/2 cup chicken and vegetable mixture and roll up.

    MOO SHOO PANCAKES: In medium bowl, combine flours. (reserve 1 tbsp white flour) Add water, stir with wooden spoon until smooth dough forms, 3 to 4 minutes. Knead dough til soft and elastic, 3 minutes.

    Sprinkle work surface with reserved tbsp flour, turn out dough and divide into 8 equal pieces. Roll each into a 6 inch circle, 1/8- inch thick. Layer on a plate between sheets of waxed paper; cover with plastic wrap and refrigerate until ready to use, up to 2 hours. (If pancakes shrink slightly, roll them out again just prior to cooking.)

    Place medium nonstick skillet over medium- high heat 30 seconds. Add 1 pancake and cook, turning every 10 seconds, til light brown spots appear on both sides, about 30 seconds. Repeat to make 8 pancakes. Wrap in foil and keep warm til ready to use.

    NOTE: Can make pancakes ahead of time. Wrap well in plastic wrap.

    not realy a chineese food man, more of a mexican or indian or italian man id go with aromatic duck and malayan( mind the spelling) chicken.
