Dinner is always easy, but if you find a different sort of restaurant she may even be impressed (ie melting pot - fondue, dinner theater, etc)

Something interactive would be good - like theme park (though dont have to go that far). That way, you still have the opportunity to talk, etc but since you are doing something you dont have that akward space to fill

Good start would be dinner at half decent restaurant (don't want to go all out just yet), from there go get some coffee somewhere else. Hopefully the coffee shop is in a spot where you two can both get a cup and walk with it. By the end of the night you both should have a good feel of each other. Then if the mood is right you can get a little tongue action but nothing more than that.
