Yeah but it's not all guess work, it's not like a paelontologist finds a femur bone of a prehistoric animal and then imagine what it looks like. They unearth entire skeletons and by examining the bone structure, the approximate era it died in (so they know what the climate was like) they can take a pretty good educated assumption on how that dinosaur looked and moved, whether it had scales or feathers. I say feathers because birds are the last decendents of the dinosaurs.
The huble telescope has explored the far depths of space, we know there are billions of stars out there, and as space is a vacume and we've never seen beyond space, its a fair assumption to guess it's never ending, thus the possibility of billions of galaxies existing isn't far fetched.
