guess you can simply ask them if its fine to use your hands, but i'm sure they won't mind. most restaurant adapt to the local culture instead of sticking strictly to the owner's culture. even the recipe may be slightly different. i always assume that sushi in japan will taste quite different from sushi elsewhere in the world.

personally, i hate getting my fingers sticky and oily.
As far as I know in the formal sense of sushi chopsticks are used to remove a piece from the "community plate" to your personal plate then hand from plate to mouth.

Kinda like the formal tradition of fork on left hand knife in right to cut the food. Set the knife down and switch from left to right hand to put the food in your mouth.

Who does that crap anymore? Lol

You're right I don't have any kids. But I will say in nearly 33 years, I still haven't figured out how to use chopsticks.

That's because Asians know how to make real sticky rice to you can get a mouth full with only one chop stick.

It's amazing though how fast some of them can shovel the food in with chop sticks though.

It's all about relaxing the fingers. U might have a deaf grip on those poor chops.

I enjoy using chopsticks and can "shovel" just as effectively with em as i can with a fork.

I have always cut with left hand and so i never had to switch. For me eating is about satisfying my hunger, so i assume i automatically used left hand to cut as i am a right handed fork guy!
