I eat a shit ton of chicken breasts and most the time I use a salsa to dip them in. I'll typically make this salsa:
1 (28-ounce) can whole tomatoes, drained, reserving the juice
1 small red onion, roughly chopped
1 Jalepeno
1 garlic clove, roughly chopped
2 limes, juiced
1/2 cup chopped cilantro leaves
Kosher salt and freshly cracked black pepper
Extra-virgin olive oil, for drizzling
I usually use a food processor to chop each ingredient individually so I can control the size of the chunks better. Mix all these ingredients after chopping or processing and then refrigerate for an hour to help the flavors combine. For everyday this sits in your fridge the hotter it will get!
