    Duration of Insulin Spike

Here goes: The same amount of insulin is released regardless of the GI of the carb (correct?). However, the lower the GI, the slower the spike and decrease of blood sugar.

My question is.... generally how long after consuming carbs does it take for blood sugar levels to return to normal? I would like to know how long I have to wait to consume a pro/carb meal after a pro/fat.

2-3 hours still applies. After 2 hours your okay to eat a pro/carb after a pro/fat, pro/fat also induces an insulin spike as well just FYI.
