    question on nuking red potatoes?

    well, i chopped them up, threw them in the nuker with a lid on top, and cooked them for about 10 mins. turned them twice during that time, and afterwards, some were a little dry and soft and others were still a bit hard inside.

    anyway, question is, is there any concerns for overcooking the potatoes? will cooking them too much affect their GI? if so, how can you tell when is too much?

    just a little frustrating cause unless the pieces are all the exact same size, it's almost impossible not to have some softer and some harder. just want to make sure their GI won't be compromised.

    hmm usually when i throw potatos in the microwave i leave them whole but use a steak knife to put a bunch of holes in it. one medium sized potato usually takes about 6 minutes....no issues with some parts being softer or harder. not sure how it affects the GI....although cooking anything will affect it to some degree no?

    I do it the same way..poke some holes in the potato so it doesn't blow up and microwave until cooked.

    I can’t see it losing the nutrients from nuking it. If you boiled them, then I say some of the nutrients are lost.
