Benefits before bed? Well thats goal dependent imo, for me there would be NO benefit eating that much before I sleep. It will fill you out, definitely contribute to fat storage because glycogen stores wont be used overnight...well they will to some degree but not that amount of carbs.

Anyways too hard to answer, what are you trying to do? Give us your goals and it will be much easier.
And you want examples of low GI carbs, do a google search...there are TONS literally.

More than enough carbs for one meal but it's more about how many kcals your taking in. If it fits into your 'daily needs' than fine.

Before bed, I would eat something like steak/salmon with oats or another slow GI carb (don't have to eat carbs before bed) to slow digestion throughout the night.

If you are just trying to bulk, carbs all the time are good. If you are trying to "clean" bulk however, you are in a much more difficult situation.
