    Scrambling eggs

    When you scramble eggs are you in any way destroying the egg protein or making it less efficient.

    Nope.

    On the contrary, you are increasing the NPU of the egg protein by cooking it thoroughly.

    ^^ this. I know it's counter-intuitive, but cooking eggs actually increases their bioavailability with regard to protein.

    Good thread. I thought scrambling eggs damaged the protein, something to do with the yolk and white mixing and when heat was added it damaged them somehow.

    Thanks gb. I've eaten eggs every morning for so long now I almost get sick from eating them. I gotta at least switch up the way I cook them lol

    I eat em all the time too, and always switch it up. Don't forget hard boiled - no fuss, and with some salt, pepper, and mustard (if that's your thing) they can be delicious too!

    I love hard boiled eggs. Admittedly, I reduced the frequency I consumed eggs because of the high cholesterol; but I am beginning to read that the cholesterol in eggs actually isn't bad. That is another great and tasty source of protein for me!

    I use to always do my scrambled eggs in the microwave, and struggled to get 6 down at a go. Switched to a pan a few months back and can scramble 12 whites with 2 yokes now and i actually enjoy them each time. Trick for me is to keep them nice and light and wet. Think ill go do some right now.

    ^^ this. Not that it should be ignored completely, but there's a lot of overblown hype there. I eat tons of whole eggs and my cholesterol is excellent... and I do mean excellent.

    This is indeed key! Most people overcook eggs and don't even realize it. Mine are JUST cooked. Very soft and wet.

    About this soft wet egg, what about hard boiled. I eat a good 8-10 a day...

    I like soft boiled eggs, (boiled for 6 mins) I love eggs! Omelets, poached, scramble,fried Mmmmm gimme!
