    Chicken / Steak Marinades

    There was a Thread that was kinda like this a few years back but lets get some fresh ideas goin. There hasn't been a new post in here for too long!

    Steaks (Beef):

    Fresh ground black pepper
    Fresh minced garlic
    1/4 Vidalia Onion (Sliced)
    1/2 Lemon or Lime (Sliced)
    1 Pinch Brown Sugar
    Worcestershire or Soy sauce

    Marinade for at least 4 hours and throw on the grill

    Chicken Breast:

    1 Lemon, Chopped, including skin
    Fresh ground balck pepper
    Garlic powder or fresh minced garlic
    Orageno
    Chopped fresh Cilantro

    Marinade overnight and Grill on high heat or broil till charred on the outside and tender in the middle.

    Your chicken one sounds good. Anything with cilantro in it is alright with me!

    4 cloves garlic, minced
    1/2 teaspoon salt1/2 cup fresh lemon juice
    2 tablespoons olive oil
    2 teaspoons cinnamon
    1 teaspoon Hungarian hot paprika
    1/2 teaspoon black pepper
    1/8 teaspoon cayenne

    Directions:

    Whip all the ingredients together with a whisk or better yet a food processor/blender.

    This marinade is enough for 5 chicken breasts (halves) or 10 drumsticks/thighs. Marinate the chicken for 3 hours or overnight then broil or BBQ

    1 cup beer
    1/2 cup soy sauce
    1 tablespoon oil
    2 cloves garlic, minced
    1 tablespoon onion, chopped
    1 tablespoon parsley, chopped

    Marinade overnight then grill while brushing marinade often

    Yah man i love Cilantro too, It makes everything taste better.

    This is interesting too, Cinnamon huh? And can you get Hungarian hot paprika anywhere? Like Wal-Mart?

    You should be able to get that paprika at wal-mart or kroger. The cinnamon gives it an interesting flavor. If you like Lebanese/mediterranean food you'll love this chicken recipe. I usually will cut pieces of chicken into 1 inch cubes to make shishkabobs.

    Also, I never marinate a steak unless I happen to buy a really cheap cut!

    PS: Check out my blog entries if you like cooking and healthy recipes. I haven't updated in a long time because of lack of interest but I'll probably post a few more from time to time.

    I'm cooking your sweet potato fries right now. I eat sweet potatoes everyday, but I can't stand them. So far they smell good

    Awesome! How did they turn out? That's on of my favorite snacks that actually fits into a healthy diet. Sometimes you may need to cook them a little longer as different ovens hold different temps but I'm sure they still turned out great as it's an easy recipe. Let me know!

    I did have to cook them a little longer, and I think I gotta get some better non stick spray, but I actually really liked them. I did two huge sweet potatoes worth and they're already gone lol.
    This is actually the first sweet potato recipe I've ever had that I thought tasted good besides the one for Thanksgiving, and that's nothing but sugar...

    I've seen the stuff you're talkin about, sounds good. Throw it on the grill and the dressing would char and carmelize, yummy

    I use a vinaigrette dressing from time to time but when I'm really cutting I'll usually make one from those little dry packages mixed with vinegar and whatever oil just so I know it's a little "healthier".

    Glad you liked those. The egg whites are what make them crispy but don't over egg white cause then they'll be a little softer and take longer.

    Yah these turned out crispy on the outside but soft in the middle, I got a few too thin and those were pretty much crispy all the way through LOL. But I'll definately be eating my sweet potatoes this way from now on.

    \for 5 lbs chicken breast:

    Gralic 3 cloves, mashed or diced small
    Nutmeg just a little
    Italian Herb 1 teaspoon
    Soy sauce 4-5 tbs
    cummin just a little
    Lemon Grass just a little
    Olive oil 4-5 tbs
    Black Pepper little
    Cayenne Pepper up to you
    Onion sliced 1 large onion (take out before cooking)

    Let it sit in the fridge covered for 6-8 hours. Put fthe Chicken breast on a large flat tray, turn on the oven to max or broil, wait 5 minutes only and put away from the fire (if the fire is on th ebottom put high up or vica versa).
    20-22 mintues. Let it sit out of the oven for 3-5 minutes then put in sealed tupper ware unless you are going to enjoy right then.
    you'll the most tender/juicy chicken breast ever.

    Carribean Jerk (lawrys) 1 bottle
    Stubbs Steak Marinade 1/2 bottle
    Warstershire(sp?) A good few(10-20) dashes.
    Catalina dressing. A good few dashes
    Chalula hot sauce. About 2 tbspns
    Garlic Powder. about 3 tbspns
    Black pepper about 1 tbspn
    A squeeze of lime.'

    This is "Fight Club" marinade. One batch will last me a month at least. Good on steak, vegs, and chicken.
