Easy Chicken Dish
4 boneless chicken breasts
1 can of seasoned chili beans (can use black or pinto if you like)
3/4 cup salsa
1/2 teaspoon garlic powder
Pita pockets (optional)
Mix the beans, salsa and garlic in a bowl and set aside
Get some aluminum foil to wrap the chicken in (1 sheet thick, 2 sheets normal)
Wrap each breast individually making a pocket
Use 1/2 cup of the salsa bean mix and pour on top of each chicken breast
Close the foil but leave room for the mix to steam with the chicken
Cook @ 350 for 40-55min depending on the size of the breasts
Now you can eat that after its done or it you need some more carbs, I like to cut up the chicken into small pieces and put into pita pockets and top with salsa!
The nice part is there is no cleanup since they are self contained in the foil!
