Spicy Thai Peanut Chicken
This is my new favorite.
4 chicken breast cut into chunks
3 tablespoons of natural CHUNKY Peanut Butter (you can add more or less to your liking)
3 tablespoons of Hot Red Curry Paste (again more or less to your liking)
2 or 3 red bell peppers cut into strips
green onions (optional) chopped
Cook the chicken and bell peppers in a large pan or wok till theres a little pink left in the middle of the chunks.
Add Peanut Butter and Curry Paste and stir like crazy. Be sure to remove from heat after 5 mins, you don't want over cook the chicken.
Serve on top of Jasmine rice, Brown rice or have a side of steamed vegetables.
Green onions sprinkled on top of dish and enjoy!
