    Almond crusted chicken

    Do this about 3 times a week. Amazing new texture and flavor to ur chicken.

    Slithered almonds. Basic breading technique. Using egg whites. Little wheat flour also. If u need complete directions let me know.

    I pair this with crispy brown rice. Cook rice normal, then pre heat sauté pan. Evo in pan and throw your rice in. Crisp both sides. I can actually end up eating double the amount of rice this way too. Also I only use short grain brown rice.

    would long grain br work? And you roll chix in egg whites then flour and almonds, correct? You cook chix in pan or oven?

    I do not measure when I cook. Only when I eat. But it's pretty simple.

    I buy Costco chicken so it's huge. I butterfly them in half so still a 6 oz breast and thin.

    4-5 egg whites. Depending how many u cook.
    Flour your choice on kind
    I buy slithered almonds. ( leave them whole or chopped up)

    Breaking procedures is always dry wet dry.

    So dip breast into flour.
    Semerg into egg wash
    Press into almonds.

    After the breading, put in freezer for 5 mins helps adhere everything.

    Med heat sauté pan. Extra virgin oil. Sear chicken until golden brown both sides. Depending on thickness of chicken finish in the oven.

    Brown rice I do not like long grain so not sure if it would work. I don't see why it wouldn't.

    But make sure u have non stick pans.

    And cook rice on high heat

    I just tried this instead used the cajin rub and used special k instead of almonds. It was very juicy and awesome tasting. Going to try the crispy BR next time too.
