    Egg salad

    ANY recipes out there? I eat a ton of hard boiled as snacks. So thinking about an easy meal with it.

    first you take some eggs...then you take some low fat mayo..

    from the net..

    6 large eggs
    1-2 tablespoons mayonnaise (or Greek yogurt)
    Salt and pepper
    A tiny squeeze of lemon juice
    2 stalks celery, washed and chopped
    1/2 bunch chives, chopped
    2 small handfuls of lettuce
    8 slices of whole grain bread, toasted

    Place the eggs in a pot and cover with cold water by a 1/2-inch or so. Bring to a gentle boil. Now turn off the heat, cover, and let sit for exactly seven minutes. Have a big bowl of ice water ready and when the eggs are done cooking place them in the ice bath for three minutes or so - long enough to stop the cooking. Crack and peel each egg, place in a medium mixing bowl. Add the mayonnaise, a couple generous pinches of salt and pepper, now mash with a fork. Don't overdo it, you want the egg mixture to have some texture. If you need to add a bit more mayo to moisten up the mixture a bit, go for it a bit at a time.

    Stir in the celery and chives. Taste, and adjust the seasoning - adding more salt and pepper if needed.

    To assemble each egg salad sandwich: place a bit of lettuce on a piece of toast, top with the egg salad mixture, and finish by creating a sandwich with a second piece of toast.

    Make 4 sandwiches.

    I like mayo, so I use eithter low-fat or the olive oil mayo, I also add mustard,all different types just to change it up.

    2 cups baby spinach.
    chopped/cubed chicken breast. (i heat this up)
    6 egg whites boiled (large chunks - you can use whole egg)
    2 TBSP of crushed almonds
    Lite honey mustard vinnegrette (1 TBSP) - 20 cals

    I know you're not a mayo fan, but this is mine..

    Eggs
    Light mayo
    Mustard
    Vinegar

    All w/ just the right amounts, never really "measure", it's tangy & kills the everyday egg taste..

    Here are a few I use... depends on your taste.


    Egg Salad

    2 eggs (boiled) Chopped
    1 Tablespoon fat free sour cream
    1/2 tsp Dijon mustard
    pinch of paprika
    pinch of dill
    salt and pepper to taste

    Mix together evenly and put on bread or on lettuce with tomatoes as a salad.



    Red Egg Salad (spicy)

    2 to 3 -Hard boiled Eggs
    2 tbsp.-Fat Free Miracle Whip or Sour cream (non Fat)
    -a few slices -Jalapenos
    1 tsp.-Curry Powder
    1 tbsp.-Mustard
    -Salt and Pepper to taste
    1 tbsp. - Hot Sauce
    -Cucumbers
    -Bread


    Chop up hard boiled eggs in mixing bowl. Add FF Miracle whip.
    Add jalapeños, curry, salt, pepper, hot sauce and mustard.
    Mix together, Put on bread add cucumber and enjoy!



    Simple Egg-Tuna Salad

    6 Hard boiled eggs - chopped (you can use 8 egg whites)
    1 avocado (cut up)
    2 small cans of tuna drained (I use albacore)
    2 tbsp. Kraft Mayo with Olive Oil (may need slightly more) or Sour cream (non-fat)


    Add Eggs and tuna in bowl mix evenly, add cut up avocado and mayo mix completely.



    Egg and Tuna Salad

    Hard boil 1-2 two eggs peeled and dice finely.
    Mix with one can of tuna (drained)
    Stir in 1-2 tablespoons of low fat mayonnaise (Kraft Mayo with Olive Oil) is great or you can use non-fat sour cream
    One large tablespoon of sweet relish (dill is good as well)
    Add salt and pepper
    Spoon onto two slices of Ezekiel bread

    Makes 2 sandwiches

    With the recipie above you can omit the tuna and add 4 eggs~
