Mex style sloppy Joe (turkey)
This is a good, simple recipe that everyone will like, even the kids! This makes approx 25 6oz portions.
Ingredients:
Onions, chopped 6 cups
Garlic, chopped 1/4 cup
Turkey, ground, 4lb
Tomato sauce, 6 cup
Green chilies, chopped 3/4 cup (you can use fresh or canned, can be found in the Mexican aisle pretty cheap)
Chili powder, mild, 1/2 cup
Bun
Monterey Jack cheese, shredded, 3 cup
Lettuce, shred, 3/4lb
Tomatoes, diced 1/4 inch, 3/4lb
Sour Cream, non fat, 3/4 cup
Directions:
Cook onion and garlic until tender, add the turkey and brown; add the tomato sauce, chilies and garlic powder, heat well.
On bottom half of bun add 6oz turkey mixture, then 1/4 oz cheese, 1/8 cup lettuce, 1/2 oz tomatoes, and 1 1/2 tsp sour cream. Top with other half of bun.

This is a good BASE for other meals, you can add other ingredients and turn it into something else but still similar, whole wheat pasta, cilantro and diced tomatoes, Taco spaghetti! diced tom's, corn, black beans, pinto beans, a can of v-8 and cilantro Mex style chili! you can also make it as hot & spicy as you want or bring it down a little. Have fun with it
