Chicken/Turkey Cacciatore with Spinach Fettucicine
This is a "stewish" type recipe that is going to be good over pasta or rice and is easily reheated like a stew wound be with out drying the protien out.This recipe is for 12, 3oz protien, 6oz sauce, 4oz pasta
Ingredients:
Olive oil, 3tbs
Chicken or turkey, cut into strips, 3lbs
Mushrooms, sliced, 1 1/2 cups
Onions, diced, 1 1/2 cups
Garlic, chopped, 3 tbls
Green bell pepper, diced, 1 1/2 cup
Tomatoes, canned, crushed, 6cups (about 3-4 cans)
Water, 3/4 cup
Basil, fresh, chopped 1tbls (if using dry start by using 1/2 a tbls and adjusting from there)
Oregano, fresh, chopped 1tbls (if using dry start by using 1/2 a tbls and adjusting from there)
Pepper, 3/4 tsp
Parmesan cheese1/4 cup
Spinach fettuccine, cooked 6 cups (can use wheat noodles)
Directions:
Coat pan with cooking spray and add olive oil, heat.
Add protien, onion, garlic, green bells and mushrooms and cook on med high for 30minutes.
Add water, tomatoes, and spices and simmer over low heat for five minutes.
Place protien and sauce mix on pasta and sprinkle with parmesan cheese.
