Either way. I'll switch a lot. I never really do the same thing week in and week out

I was always told to get in 4 movements per body part. Therefor I do 4 sets for each movement. That would be giving me 16 total sets per muscle. Every now and then I will do 3 movements instead of 4, but usually bang out 4...Just how I like to do it.

    doesnt matter

    3 exercise 4 sets
    4 exercises 3 sets
    even
    6 exercises 2 sets

as long as you are busting your @$$ on each set

rule of thumb for me: Big muscles 10-12 sets total; small muscles 7-8 sets

do you mean "sets" or movements/exercises?
Or is this a circuit style regimen?

your chest/back/delt looks good to go

I would even up the quads/hamstrings to 5 exercises..since they comprise the largest muscle complex on our body

bis looks good (as long as you have one exercise for the branchialis such as hammers and reverse grip curls etc.)

I would cut 1 set out of each tri exercise

calves I wont comment because it's somehow genetically related and some people get big calves doing nothing, some get is over hi rep exercise, some over low rep heavy movements and some not anything noticeable after trying EVERYTHING
