Pho
Ingredients
For the broth:
6 qts water
1 lb ox tails
1 lb beef bones
1 lb beef chuck
1 small yellow onion, cut in half
1 inch size of fresh ginger, cut in half lengthwise
2-3 large carrots, cut in halves or quarters
5 star anise pods
1 tsp whole cloves
1 Tb whole peppercorn
1 stick cinnamon
2 Tb sugar
1 Tb sea salt
4 Tb fish sauce
(last three ingredients more or less to taste)
For the soup:
Beef chuck (from the broth), sliced
Rib eye steak, thinly sliced
Beef tripe, cooked in boiling water, then thinly sliced
Fresh cilantro sprigs
Scallions, chopped
Bean sprouts
Jalapeños, sliced
Fresh basil leaves
Yellow onion, thinly sliced
Lime wedges
1 package of 1 mm size dried pho rice noodles, soaked in very hot tap (not boiling) water for about 20 mins
Hoisin sauce
Sriracha hot sauce
Directions
The broth:
1. Broil the onion and ginger on the top shelf in the oven, cut side up, until charred.
2. In a large pot, combine water, ox tails, beef bones, beef chuck, charred onion and ginger pieces, carrots, star anise pods, cloves, peppercorns and cinnamon and bring to a boil.
3. Add sugar, salt and fish sauce.
4. Lower heat and simmer for 3-5 hours.
5. Check flavoring about after about 3 hours and add more sugar, salt, fish sauce if desired
*Prepare the night before for more intense flavors, and skim fat before reheating.
Assembling the soup:
1. Bring two pots of water to a boil.
2. In first pot, place noodles in strainer and swish noodles for about 5-10 seconds, until noodles are soft but not mushy. Place in bowl.
3. In second pot, place rib eye in strainer and swish until meat turns pink. Place in bowl.
4. Add tripe, beef chuck, bean sprouts and onions to bowl.
5. Ladle broth (make sure it's at a rolling boil) over ingredients in bowl.
6. Add basil, scallions, cilantro, jalapeños, hoisin sauce, sriracha and a squeeze of lime to bowl.
7. Stir and enjoy.

We had Pho' the other night too - love it . I always get brisket & tendon in mine .
We have an awesome place right up the street from us. Legit straight off the boat Vietnamese couple who do it right . I also jones out for their Bánh mì sandwiches .

Never had it but there is a Japanese tea cafe near me that has it on sundays after 4. I'd like to try it sometime, maybe ill make that sooner than later now

new Korean place just opened up 1 block from the house. Got Spicy Beef Soup for the wife, some Spicy Pork for me and a BimBimBop to share.
