I only eat good cuts. Rib eye, New York, tenderloin. So, anything past rare is blasphemy, in my books...

I have had a few well done steaks and I liked them. Kinda more like a jerky texture I guess. Which I like me some jerky. But You loose so much natural flavor and juice. like my steaks rare, but if its a restaurant I will order it medium rare. Who knows how clean they are. I am also surprised on a restaurants ability to mess a steak up. I've cooked a $6 steak in a pan on my stove that taste better than some places $35 steak.

i do, however, alternate between medium rare and medium. ive found medium rare sometimes leaves these little white chewy things that cant be chewed up. i really dont like this. as a result i switched to medium and the white things are gone.

some very good cut of filet does not have the white things at med rare, but a lot of them do. i used to eat only filet, but have branched out to the ribeye, which i get medium rare.

I first of all buy ribeye steak or I don't buy steak at all. It's got the best flavor and texture.

Second, I like my steaks rare. Basically, I want it hot, but still at the point where it has blood and the inside is pink.

And lastly, I want my steaks rubbed with this:

Rare if its a really good restaurant with aged beef, prime, all that. Medium rare of its just a normal steak house. I draw the line at blue rare. I like my meat to be at least warm inside.

I don't get people that turn a $50 steak into jerky either. Puzzles me.
