Cube 16 oz lean stew meat into 1 inch cube and brown in a sauce pan coated with olive oil or vegetable spray for about 3-5 minutes. Add 1/2 cup low sodium beef stock. Cover and simmer for about 7 minutes. Add frozen peas and carrots, and canned potatoes. Cover and simmer for about 5 more minutes. Uncover and let stand for 2 minutes. Enjoy!
