Get a can of Pink Salmon mine is 14 3/4 ounces or (418) grams. Try to find low Sodium or low fat crackers

1 (pink salmon), drained
1/2 small onion, very finely chopped (Optional)
1/2 tablespoon fresh lemon juice (Optional)
2 tablespoons mayonnaise (Optional)
1 large eggs, lightly beaten
Salt and pepper to taste (Optional)
1-1/2 cups finely crumbled fresh bread crumbs or crackers
Olive oil for frying (about 4 tablespoons)


Break the salmon apart with your fingers or fork and place in a medium-sized work bowl. Add the onion, lemon juice and mayonnaise; combine well. Add the egg and mix in. Salt and pepper and stir again. Add bread crumbs if using crackers crush with hand and mix well into bowl. Shape into 4 large patties.

Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the salmon patties and fry until golden brown, about 4 minutes per side. Serve immediately.

Note: This amount makes a generous portion for 2 people. Around 4-6 patties depending on thickness

Note: You can also bake Salmon patties. Refrigerate 1 to 2 hours. Measure Put on cooking sheet sprayed with vegetable cooking spray. Bake 25 to 30 minutes at 350 degrees until brown.
