    Sweet potato biscuits

    So the aren't your light fluffy biscuits but they do provide a way to have your sweet potatoes on the go with no utensils. This was the first run and I'll add changes as I tweak the recipe.

    800g of baked sweet potato no skins
    3 cups oats blended to flour
    2 egg whites

    Mix all in a large bowl till well blended. Bake at 350 till they start feeling crispy on the outsides. Mine took about 30 minutes or so

    My mix made 10 biscuits when weighed to 100g before placing on the baking sheet and don't forget the nonstick spray.
    Macros per biscuit are
    165.2 cal
    5.9g protein
    32.8g carbs
    1.6g fat

    Gonna have to give these a shot.. They sound pretty tasty. Thanks for postin

    For the fluffiness could you use a little baking powder? not too familiar with baking but I've seen the gf add it to muffins/biscuits before..

    Might have to throw some hot sauce in my mix too

    That's possible. May work just adding more oats. This recipe yields a very sticky dough rather than a dry dough like you normally get for bread and such.
