Home made bulking fish cakes
I can't take the credit for this, but it was a recipe I discovered in a magazine a long time ago but liked so much, made these fish cakes and they turned out AMAZING! I'm a big fan of cooking in general.
220g of tinned red salmon (though any canned fish would do)
100g of frozen peas
1 egg (for binding)
1 spring onion
400g sweet potato (though you could use any other potato's)
Dill
Parsely
Salt
Pepper
Breadcrumbs
Boil your potato's till they are of mash quality. While you are doing this, empty your tinned fish into a bowl and season with salt and pepper. Make sure you break the fish up with a fork. Dice up your salad onion, add to your fish along with the peas and 1 egg, then get your hands in there and get mixing!
Once your spuds has boiled, drain and mash and add your herbs. Add to your fish mix.
What I like to do next, is get a separate bowl full of bread crumbs, any will do and you can most in a shop, then get your potato/fish mix, grab some which you can make into a ball or a pattie or whatever you want, then put it in your bowl of breadcrumbs. Then i like to shake the bowl, maybe turning the pattie over, till you know it is completely covered in breadcrumbs.
You can make as many or few patties as you want, but the nutritional values for the whole thing work out as:
566 calories, 38g of protein, 60g of carbs, 11g fat (of which only 3 are saturated). Of course if those carbs look way too high, you can make this without using potatoes at all!
Bake for about 20 minutes. Enjoy!
